Starting a new week off right...

...with a blog post! :)

Here are some of my delicious eats over the past few weeks. (I know...bad food blogger!)

This is a low sodium canned soup that I made better by adding peas, black beans, and broccoli to it. Nothing like upping the nutritional value! :)

Along with sweet potato fries. I obviously hate ketchup. ;) (It's organic without HFCS, and I've come to enjoy it more than Heinz!)


Many evenings have been spent reading during and after dinner with books and this beautiful candle.

And maybe some of this:


Speaking of books, here's what I've been reading lately:

This was hilarious and brilliant, if a VERY easy read. I smiled a few times at the stories and also sadly noticed that many of them were somehow related to an eating disorder. (I.e. The woman following the Orange Juice Diet who had high potassium levels, the man with Compulsive Overeating, the young girl who ate paper instead of food to keep the hunger pangs away, and the body builder who almost died from an OD of caffeine pills.)

I have just started this book, which many of you may have read. It's excellent so far.

And since I rarely have just one book started, here's the other one I'm currently reading:

This one is written from a Christian perspective, but I firmly believe that many women can benefit from it. It talks about the different lies we believe, such as that we must be superwoman, that we must be loved by everyone, etc. I haven't gotten very far in it, but I like it so far.

Back to the food...!

Many mornings I crave protein/savory. So I made this great spinach omelet with full fat cheddar and a veggie sausage patty.

Then topped it with ketchup! And added coffee to the meal, obvi.

Occasionally Starbucks needs to throw away any pastries that have not been sold due to company policies. However, they are still very fresh and perfectly good. So, having a few friends that work there is HIGHLY advantageous to me, because they GIVE them to me! Here's a yummy chocolate cupcake that I exercised great self-restraint in eating just one half and waiting several more days before finishing it! :)

And to add back in some healthy food, here's a great big salad I made:

-Spinach
-broccoli
-eggplant salad (from Whole Foods)
-hummus
-black beans

  3. great idea to add things to ready made soup. :-) i just had sp fries last night. definitely one of my fave winter foods!
